Sometimes what we need is food that comforts and bring joy to our lives. It may not be something elaborate or luxurious, but something that is familiar, something that we have lived with and yet so understated that we would not have given it a second thought. To me, a banana muffin with chocolate chips is just the thing. Naturally sweet and and not too overboard even with the chocolate chips. Give me that anytime.
Sharing herewith my recipe for a healthy low sugar version of banana muffin with chocolate chips and almond slices. I have tried with walnuts, but my children did not like it. They went nuts with the almond slices. Slicing the almond by hand is better than having store bought as store bought almond slices are too thin and does not give the muffin a nice texture. Sugar is cut down to the minimum in this recipe as the sweetness comes from the ripe bananas and chocolate chips. We do not fancy stuff that are too sweet anyway. Just make sure the bananas are ripe enough as they would not be as sweet if they are under ripe.
What I like about this recipe besides the healthy ingredients is that it is a very fast recipe. It does not call for complicated ingredients and there is no butter to melt. One can whip it up and have nice, warm muffins in no time. Do give it a try. My batch got cleaned up minutes after they came out of the oven. Yes, it is that good.

Ingredients :
1/2 cup vegetable oil
2 eggs
1/4 cup brown sugar
3 ripe bananas
1/4 tsp vanilla essence
1 2/3 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp instant coffee powder dissolved in 1 tsp hot water
1/2 cup chocolate chips
1/2 cup almond slices
Method :
Preheat the oven to 205 deg Celcius
Peel and mash the bananas.
Add the oil, vanilla essence, coffee and sugar to the bananas and mix well
Coat the chocolate chips and almond slices with a little bit of flour
Add the baking powder, baking soda and flour into the bananas mixture
Gently mix till well combined. Do not overmixed
Add in the chocolate chips and almond slices and mix well gently
Fill muffin cups up to 3/4 full with the batter
Garnish the top with some chocolate chips and almond slices (This step is optional)
Bake for 20 minutes or until a tooth pick inserted comes out clean
