Easy and Healthy Lemon Cake a la Starbucks

I must confess that I have never had lemon cake in my life. Sure enough I have heard a lot about it, but not being someone who fancies sweet stuff, I have never had the urge to try it out. Recently a new cafe opened up at my neighborhood with lemon as its theme. It has fast become a hit with its bright and cheery interior, as well as instagram worthy ambient and food. I heard the lemon cake there is good too though I have never tried it myself.

Anyway, because of all the hype around me, I decided to try making a lemon cake a la Starbucks. The most important element in my venture is that it has to be of low sugar of course. Putting together all the ingredients was easy and soon my kitchen was full with the aroma of citrusy lemon.

I must say that the lemon cake exceeded my expectations. It is very moist and not too sweet. The glaze were tangy and full of lemon flavour. I instantly fell in love with it. So were my family. Before I knew it, the whole cake was gone. Yes, it was that good.

Ingredients :

For cake :

120 g butter

1/2 cup sugar

2 eggs

1 tbsp lemon zest

2 tbsp lemon juice

1 tsp vanilla essence

1 1/4 cup flour

1/2 tsp salt

1/4 tsp baking powder

1/4 tsp baking soda

1/2 cup greek yogurt

For glazing :

1 cup icing sugar

1 tbsp milk

4 tbsp lemon juice

Method :

  1. Beat sugar and butter until all the sugar is dissolved.

  2. Add eggs, vanilla essence and greek yogurt.

  3. Beat till well combined

  4. Add in flour (sifted), baking powder, baking soda and salt.

  5. Beat till just well combined.

  6. Transfer to a loaf tin lined with baking sheet.

  7. Bake in oven that has been pre heated to 175 deg Celcius for 55 – 60 minutes.

  8. Remove from oven and let cool for at least one hour before glazing

Glazing the cake :

  1. Add milk and 1 tbsp lemon juice to icing sugar.

  2. Hand beat the mixture till the sugar cannot dissolved anymore.

  3. Gradually add lemon juice till all sugar dissolved but the glaze is not too runny.

  4. Pour over the lemon cake. Smoothen to ensure the whole surface is covered with the glaze.

  5. Let it set for at least 15 minutes before removing the cake from the loaf tin.
